Yukon Gold French Fries

Ingredients:

2 lbs Yukon Gold Potatoes

Sunflower or olive oil

Salt and pepper to taste

Procedure:

Wash and dry the potatoes.  Remove any eyes or damaged pieces of the spud.  Slice into 1/4 wide strips and don’t worry if the lengths are all different.  Coat with enough oil to provide adhesion for the salt and pepper. Add salt and pepper.  Mix thoroughly.  Spread the potatoes out on a very lightly oiled baking sheet.  Bake at 350 deg F for about 45 min.  Watch carefully for doneness.  Remove from oven and cool when the potatoes are golden brown but not burned.  Season with herbs if you like and eat with catsup.
