Ingredients:
1 tbsp. olive oil
1 pound fresh snap peas
1/2 bunch scallions, chopped
2 cloves garlic, chopped
1/2 tsp. salt
1/2 tsp. fresh ground black pepper
1 sprig fresh spearmint, chopped
Directions:
In a large skillet, heat oil on medium. Add the scallions, garlic, and peas. Saute for a couple minutes, adding the salt & pepper as you stir. Remove from heat & sprinkle the mint on top. Enjoy!
