Baked Ham in Champagne

Ingredients:
1  3-5 lb. organic bone in fresh pork leg (or ham)
2 cups organic brown sugar
1 bottle dry high quality Oregon Sparkling wine
3 tbsp. local honey
1 & 1/2 tsp. ground ginger
1 & 1/2 tsp. dry mustard

Directions:
Preheat oven to 325 degrees.  Rinse ham, pat dry,  place in baking dish & score.  Pour 1 cup of the brown sugar & 1/2 the bottle of sparkling wine over ham & bake for 1 & 1/2 -2 hours.  While it’s baking, make the Champagne sauce- in a mixing bowl combine remaining brown sugar & sparkling wine, honey, ginger, & mustard.  Pour mixture into a saucepan & bring to a boil then reduce heat to medium, simmering for 5-8 minutes.  Every 15 minutes baste ham with the Champagne sauce.  Use an instant read thermometer to check the internal temperature for safe consumption & serve.
