Tomatillo Sauce

This sauce makes a great condiment on everything from steak to tacos.

Ingredients:

6 tomatillos, husked, rinsed, and quartered
1 med. size fresh jalapeno pepper halved
1 c. chicken broth
1 tbsp. flour
1 tbsp. fresh chopped cilantro*
1 tsp. salt

Procedure:

Put tomatillos, jalapenos and all but 2 tbsp. chicken broth into a medium size saucepan. Cover and cook over medium high heat 4-5 minutes until tomatillos are tender. In a small bowl, combine flour and remaining broth and stir until smooth. Stir into tomatillo mixture. Add cilantro and salt and simmer 4-5 minutes over medium low heat, stirring occasionally until mixture is slightly thickened. Puree in blender or food processor.

*We had hoped to have the cilantro for this dish in the share this week but it went to seed too early.
