Cucumber Gazpacho

(recipe from Bay Area Bites)

Ingredients:

3 cups cucumbers
1/4 cup olive oil
1/4 cup ice cold water
1 clove garlic
1 Tbsp white wine vinegar
2 tsp fresh lemon juice
dash of salt
dash of black pepper
a sprinkle of cayenne
Preparation:

1. Peel cucumbers and rough chop. Place all the ingredients in a large bowl.
2. In small batches, puree mixture in a blender or food processor.
3. Garnish with a cucumber slice or two and a bit of Extra Virgin Olive Oil.
4. Serve with a fresh bread.
