Kale Pesto
Ingredients:
1 bunch kale (preferrably Red Russian variety) stems removed
1/3 cup pine nuts
2 cloves garlic
1 cup flat leaf parsley
1/2 cup chives
1/3 cup extra virgin olive oil
2 tbsp. water
1/2 cup Parmesan cheese (Reggiano) grated
1 lemon, juiced and grated for zest
salt & pepper to taste
Directions:
Fill a large pot with water & boil, then add kale. Cook quickly for only 30 seconds or so. Remove & rinse immediately in cold water, squeeze dry. Chop roughly & set aside. In a food processor pulse the pine nuts, garlic, parsley, chives, cheese, lemon juice, & lemon zest. Add in the kale, olive oil, & continue pulsing until smooth. Season with salt & pepper. Serve with pasta, bread, or vegetables!
