Ingredients:
2 eggs lightly scrambled
1-2 tablespoons milk or water
1 tablespoon oil, we like Organic sunflower the best
1/4 cup chopped onion
1 cup chopped kale, chopped down to about 1/4 inch pieces or sliced into ribbons
red pepper flakes
salt
Procedure:
In a bowl combine eggs and milk or water. Scramble again to blend the ingredients. Heat a pan to medium heat with the oil until a drop of water spits. Add onions and cook until translucent but not burned. Add the kale and wilt it until it is soft. The volume of kale will be reduced dramatically. Add the eggs and cook until done. Add the pepper and salt to taste. Enjoy over hearty bread.
