Ingredients:
1 ½ cup all purpose wheat or whole wheat flour (we like Bob’s Red Mill Organic all purpose)
1 teaspoon ground cinnamon
½ teaspoon baking soda
¼ teaspoon baking powder
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 cup sugar (less can be used)
1 to 1 ½ cup shredded apple (pealed if desired but not critical)
¼ cup oil or butter (melted)
1 egg
½ cup hazelnuts de husked and chopped rough (optional)
Procedure:
Mix dry ingredients except sugar and nuts in a bowl; set aside. Mix sugar, apple, oil, and egg in a separate bowl. Add the dry mixture to the wet mixture. Fold in nuts.
Add the batter to a greased 8×4x2 loaf pan. Bake at 350 deg F for 55 min or until a toothpick comes out clean. Cool for at least 10 min in the pan and then another 10 or until completely cool on a rack. Enjoy. We eat this for breakfast at least once a week in the fall. At times we also add ground cloves as well as other spices.
